day 8

1 week... can u believe it.. i can't who would have thought... so one week of doing this how do i feel. can we say i am never saying "omg" im starving... i am keeping up with small healthy snacks and nothing sugary i wake up great, and go to sleep easy... i think my body loves me for this... now my only concern is.. in 2 days i leave on vacation its not going to be so easy to stay on this. YIKES 


9:30am - green tea w/ 1/2 tsp of stevia
               2 pieces of whole grain toast with 1tbsp of almond butter

12:15 - smoothie -6 pieces of frozen peach, 1 banana, 5 strawberries, 2tbps of rolled oats, 1tbps of honey, 1/2 cup of unsweetened almond milk

day 7

home and oh so tired. oh yea and i need to go grocery shopping  but the old man is out of town, hence why u will see i ate now veggies today minus the ones in the enchilada sauce

10am - large cup of green tea w/ 1 tsp of stevia
            whole grain english muffin w/ 1tbsp of almond butter


1pm - 6 strawberries & 1 apple
           bottle of water


5:30 -2 - homemade chicken enchilada's WITH NO CHEESE

Enchilada Sauce

2 cans of tomato sauce
1/2 onion
1.5 tsp of cumin
1/4 tsp of oregano
1 tsp minced garlic
1/2 cup of chunky salsa (make sure no sugar added)

mix everything in a blender till smooth, heat on stovetop for 5minutes. ready to use or freeze for later.




Not SO Bad For You Chicken Enchilada's

3 chicken breasts
10 whole grain tortilla shells
enchilada sauce
1/2 cup of shredded cheese (optional if you are not dairy free I am but I made my husband a pan with cheese)
13x9 pan

boil the chicken, shred - add 1/2 of the sauce to the chicken mixture, put 1/4 of enchilada sauce to the bottom of the pan, take mixture put in the middle of a shell roll and place in pan, fill pan, add the remaining sauce to the top of rolls (add cheese optional). cover and bake at 350 for 30 minutes or until bubbly, and ENJOY! (note whole grain shells will be soggier than flour but totally worth it)

       

day 6

im not gonna post the long post... i was away at my friends house but DID pack my own food and did NOT cheat even though she ate ice cream and chocolate in front of me

day 5

crazy day of cooking ahead of me.. getting ready to go to my friends to spend some time with her while she is recovering from surgery. while im making her the super fatty yummy versions of the meals im going to attempt to make myself some healthier versions.. wish me luck

9am - green tea w/ 1/2tsp stevia
          2 slices of whole grain bread with 1tsp of no sugar jam
          6 strawberries

12:30 - tortilla shell 1/2 piece of grilled chicken shredded drizzled balsamic vinegar 1/2tsp and lettuce
            bottle of water

2:30 - apple w/ tbsp of almond butter

6:30 - tortilla shell 1/2 piece of grilled chicken shredded drizzled balsamic vinegar 1/2tsp and letteuce
          roasted carrots and peppers

7:00 - made the BEST banana bread

8pm - 1slice of banana bread



Low Glycemic Banana Bread

-1/4 cup of honey
-3 tbsp of coconut oil
-2 eggs
-3ripe banana's
-1/2 cup of unsweetened applesauce
-2 1/2 cups of almond flour
-1/4 cup of DARK chocolate mini chips


preheat over to 315degrees, smash banana's and mix with applesauce, add the remaining wet liquids to banana's, add dry ingredients, sprinkle in chocolate chips add to large 9x13 pan, bake for 40minutes until light brown and knife comes out clean

day 4

so can you believe i did not EAT any of the cookies i made that i threw such a hissy fit about last night that i needed something... well im sure today i will eat them.. i eat when i am stressed and nervous and today is my besties surgery to remove cancer... and well lets just say at 7am i wanted to raid the fridge of everything...
hoping the day goes smooth for everyone... lets do this!


8am - double mug of green tea w/ 1tsp of stevia

10:00 - 2slices of whole grain toast, 1 with tbsp of almond butter 1 with one tsp of sugar-free jam

12:30 - half piece of grilled chicken, whole grain tortilla wrap, lettuce, 1tsp of balsamic vinegar
            bottle of water & banana

2:30 - 2 almond cookies

6:45 - chicken wrap same as lunch with roasted peppers, carrots, onion and a few potatos

becky did great in surgery and no need for me to pig out... i even went grocery shopping and bought candy and ice cream and guess what none of it tempted me, normally if its in my house i can sleep till its been eaten

day 3

rise and shine.... well i woke up super easy, not hungry at all... and got through the day... even it being a "monday" since the kids had 2 days off of school. got them out the door and was able to start my day.

9am - 1 cup of green tea w/ 1/4 tsp of stevia

9:30 - 1 whole grain english muffin with tbsp of strawberry sugar free jam
          6 strawberries

11:30 - leftover chicken w/tomatoes & 1/2cup of brown rice
            bottle of water

3:00 OMG i want sugar........ i just want like a really good chocolate cookie and a diet coke, thats it... but i wont.. but omg i want so bad, think i need to find a desert to make.
searching and seaching for something sweet or desert like... finally found and i have everything in the house... guess what im gonna make.

 Almond Butter Cookies

1 3/4 cup almond flour (also known as almond meal)
1/8 tsp. soda
few shakes salt
4 tbsp. melted coconut oil
1/4 cup honey
1 mashed banana
1 egg
1/4 cup almond butter
2 tsp. vanilla extract

Preheat oven to 350 F. Mix almond flour, soda, and salt together in bowl. In separate bowl mix the coconut oil, honey, banana, egg, almond butter, and vanilla. Add the well-mixed liquid ingredients to the dry. Stir well. Drop onto parchment lined sheets. Bake for 10-13 minutes. I baked mine on the dark sheets for 16 minutes, but my oven bakes slow. Makes about 15 cookies.

day 2

so lucky me my kids have had a 4day weekend and I have  been sleeping in, which kinda helps the day go by faster.. i am dreading tomorrow waking up at 630am... adam is doing this with me so it helps, except i made him feel guilty for have 3 drinks last night :)


9am - green tea w/ 1/4 tsp of stevia

10am - 2 slices of whole grain toast with 1tsp of strawberry no sugar jam & 6 strawberries

1:30 - left over turkey wraps
          bottle of water

3:00 -smoothie (not sure if i can do this im sure i can but its super chalky but c'est la vie)

        Strawberry/Banana Oatmeal Smoothie
       1 frozen banana
       10 frozen strawberries
       1/2cup raw whole oats
       1/2tsp of vanilla
       3 ice cubes
       1 cup of almond milk

6:45 Dinner - Yummo if you like garlic!


       Tomato Garlic Chicken
        1lb of chicken cut into cubes
        28oz can of tomatos with  basil
        minced garlic
        1/4 yellow onion
        brown chicken in pan with 1tbsp of minced garlic and 1/4 onion once brown add tomatos, simmer for
        35min
     
        Roasted Garlic Asparagus
        -1lb of asparagus
        -1tsp of olive oli
        -1/2tbs of minced garlic
        -1/4 tsp sea salt
        -1/4 tsp black pepper
        mix the above ingredients pour over asparagus on a foil lined baking sheet, oven 450. roast for 10     
       minutes. drizzle 1tbsp of balsamic vinegar over the top when you take out


        Roasted Carrots w/sea salt

       Salad with Newman's Own Tuscan Italian (low glycemic)

day 1

so here we go...
the only thing holding me back is trying new things with different textures.. i know i prob will like it its just the whole texture thing.. so here i sit with my morning green tea and a handful of almonds BUT i just am afraid to eat the almonds... WHY... bc i hate the feeling of biting into them...

I CAN DO IT.. I know.. but when will i muster up the courage to do it..
pathetic.. I KNOW!


9am:
1 cup of lemon green tea with 1/4 teaspoon of stevia
15 raw almonds
(ready for a good laugh.. i finished them at 10:55.. YUP 1HOUR AND 55MINUTES!)

10am:
bottle of water

11:30
1 whole grain english muffin w/1tbsp of sugar free strawberry jam
1/4 cup of green grapes

1:45
granny smith apple with almond butter

5:00 dinner w/water - Recipe #1.. SCORE


Turkey Lettuce Wraps
1 head of lettuce (separated and kept cold in a bowl of ice water)

1lb lean ground turkey
2tsp minced garlic
1/4 of yellow onion
1/2 red bell pepper
1/2 can drained bamboo shoots (asian food aisle)
1 cup of julienne carrots
1/4 cup of chopped celery 
2 tbsp of hoisin sauce (go easy, as not very low glycemic)
1.5 tbsp of low sodium soy sauce

brown meat
take out of pan, use same pan and sweat the garlic and onion for about 5min
add in the rest of veggies on low and cook them down for about 10min
add meat cook additional 8minutes covered add hoisin and soy sauce 2min


dry off lettuce with paper towel when ready to eat..
put meat in the lettuce and viola..

we made some brown rice and added it to the lettuce wraps to make them go farther and cut down on amount of filling needed.

made 5 servings.
